Lemon Marmalade

Ingredients

12 lemons
3 cups of sugar

Directions:
1) half lemons and juice with reamer. Scrape pulp clean off and compost. Slice peels very thinly
2) Cover strips with 8 cups of water. Boil for 1 minute. Drain and rinse and blanch a second time. Drain, but do not rinse.
3) Return peels to pot with juice and sugar. Simmer until temperature reaches 120 degrees Fahrenheit.
